Hi guys, how is it going?
During the weekend, I spent couple of hours on Pinterest searching for some healthy recipes. I am not a kind of person that never goes to McDonald or never eats sweets but currently, on daily basis, I try to have balanced diet containing healthy food. I want a diet that is not solely based on leaves, rice and veggies, I want to eat what I like but in the correct amount so I can lose the kilograms I don't need for the summer.
When I search for some inspirational recipes, before I save them, I always make sure I don't need to spend a fortune when preparing them. We don't need to spend more money than usual on the food just to eat healthier or when we are on diet.
So I found couple of green pancakes recipes and modified them a little bit to prepare my snack. It is really satiating, fast and easy to prepare and cheap.
HEALTHY AND SATIATING SNACK THAT IS CHEAP AND FAST TO PREPARE
Delicious green pancakes that are easy and fast to prepare. Healthy choice for when you are broke.
ingredients:
1-2 potatoes
1 handful of spinach
1/2 - 1 onion
salt + other spices (you can really add whatever you like)
3 tbsp of flour
2 eggs
1 handful of spinach

directions:
1. Peel and boil potatoes and allow them to cool.
2. While potato(es) is/are cooling, peel and chop onion and spinach.
3. Chop the potato(es) once cool.
4. Mix all ingredients in a bowl.
5. Using a large spoon (preferably soup spoon), please the mixture on the heated frying pan.
6. Cook until a bit brown on the top and bottom.
7. Enjoy hot or cold :)
- You can choose to add 1 or 2 potatoes - if you want to have the same amount of onion, spinach and potato in your pancake, go for one, if you prefer your pancakes to be potato pancakes with some addition of spinach and onion, go for two.
- When chopping the onion and potato, remember that they appear in this size in your pancake. When doing this pancakes for the first time, I didn't chop the onion into very small pieces and then I had to bite this onion inside, which I didn't enjoy much.
- In the picture above, I have used blender for spinach, onion and potatoes so my pancakes turned green, the smaller potato pieces, the more difficult it is to fry it.

DeleteI'm totally making this! It looks sooo good. I'm definitely not one to go to Mcdonalds either. Although I can't say I didn't use to eat Mcdonalds a lot when I was younger. Now I simply just don't enjoy it. Always on the look out for healthy recipes so I'm definitely going to pin this xoxo
